Cranberry Pumpkin Salmon Salmon and pumpkin chunks in a sweet and savory sauce with turmeric, curry, cranberries and garlic. Serves 4 Ingredients: 2 cans coconut milk, 2 tsp. curry paste (yellow or green), 2 tbsp. peanut satay sauce, 5 tsp. fish sauce, 3 cloves of garlic, minced, 2 tsp. turmeric, 1 crown broccoli, 1/2 sugar pie pumpkin cut into 1, 1 5 oz. bag Stoneridge Orchards dried cranberries, Salmon: 1 tsp. coconut oil, 1 1b. salmon, 3 cloves minced garlic, 1 tsp. turmeric, Rice: Jasmin rice, Optional: one stick of lemongrass and cilantro for garnish and taste Instructions: 1. You will need three pans to start. The first pan is to mix the sauce. The second pan is for the salmon. The third pan is for the rice. Begin first by cooking the sauce by mixing up ingredients above except broccoli and salmon in one large saucepan. Next, add the salmon fillets into a second pan and when these are done to a medium rare (do NOT overcook) add chunks of salmon and broccoli into the pan with the other ingredients. 2. Heat the sauce with salmon and broccoli for about 10-15 minutes. 3. Cook the rice in a third pan. 4. When you are complete with the rice you are ready to serve beds of rice with the cranberry pumpkin salmon sauce.
