Chickpea Cranberry Salad
This heart-healthy salad has no fat, cholesterol or sodium and still tastes great!
Serves 6
Ingredients:
1 chopped red pepper,
1 chopped green pepper,
2-3 cups chickpeas,
2-3 cups edamame beans,
6-8 grated carrots,
1 5 oz.bag Stoneridge Orchards dried cranberries,
1 large clove minced garlic,
1/4 cup cilantro,
1-2 tbsp sunflower oil,
1-2 tbsp olive oil,
pinches of salt and pepper
optional squeezed lemon
Instructions:
1. Prepare all ingredients and mix together in one large bowl.
2. Add olive oil, and sunflower oil as needed. And a pinch of salt and pepper as desired. Lemon also is a nice addition to this healthy recipe.
3. Serves 6 people on average.
