Blueberry Pistachio Protein Balls


  • 1/2 cup dried blueberries
  • 3/4 cup rolled oats
  • 1/4 cup chopped pistachios
  • 1 tbsp. ground flaxseed
  • 1/4 cup sliced almonds
  • 1 cup dried coconut flakes
  • 3/4 cup peanut butter
  • 1/4 cup maple syrup

  1. Mix all dry ingredients together in a large bowl.
  2. Stir in wet ingredients.
  3. Mix thoroughly to combine.
  4. If the mixture is too wet, add more oats; if it's too dry add more peanut butter.
  5. Roll into balls. Chill until ready to serve.
