Stoneridge Cherry Sauce

Ingredients

1/2 cup brown sugar, packed
1/2 cup Stoneridge whole dried cherries
1/4 teaspoon fine sea salt
1/2 teaspoon cinnamon
2 tablespoons cornstarch
1 3/4 cup water
1 teaspoon vanilla extract (the good stuff)
1/4 cup fresh lemon juice
1 tablespoon unsalted butter

Preparation

1. In a heavy bottomed saucepan mix together the sugar, salt, cinnamon, and cornstarch. Once these are mixed, whisk in remaining ingredients. Bring to boil stirring the whole time.
2. Reduce to simmer. Cook stirring almost constantly until thickened.

***This sauce is good served with Plum Pudding or even a couple tablespoons on fruitcake
